Keto Buns

Recipe:

Assemble your dry ingredients:

  • 41g Oat Fibre
  • 190g Vital Wheat Meal
  • 6g Salt
  • 0-60g Sweetener
  • 2.5g Xanthan Gum

Assemble you wet Ingredients:

  • Heat 240mL Water to 55C (131F)
  • 1Tbsp Yeast
  • 1tsp Honey
  • 2 Beaten Eggs
  • 30g Soft Butter

Allow yeast to have time to activate
Using paddle attachment mix in dry ingredients
When things come together switch to hook attachment and let run on medium speed for 7 minutes
When do is ready separate into 9 balls, and put into molds to rise in (e.g. muffin tray)
Dough will need to rise for at least 9 hours in a warm humid environment. Your microwave will work as a good space to leave containers with boiling water and you separated balls.
Changing out the water with fresh boiling water will help your balls to rise.
When your ready to bake your balls place them on a tray into you preheated oven of 350F
Let bake for 15-20 minutes.
