2024 Birthday Cake

Ice Cream Ingredients:

  • 2 398 mL cans of Coconut Cream
  • 2 300 mL cans of condensed milk (1 being caramel flavoured)
  • 1L of Whipping Cream
  • Vanilla

Fudge Ingredients:

  • 1.5C semi-sweet chocolate chips*
  • 4T light corn syrup
  • 1t vanilla extract
  • 3/4C heavy whipping cream or milk alternative more might be needed if 2 thick

Cookie Crumble:

  • 1 cup (120g) Oreo crumbs (about 12 Oreos)
  • 2T butter, melted

Other:

  • Gram Crackers
  • 3 Bread loaf pans or a suitable container to hold all the liquid
  • Plastic Wrap
  • Stand Mixer w/ Wisk Attachments (or whatever tool you use to make whipped cream)

Instructions

Step 0 keeping your containers and tools in the freezer when they are not in use may help quicken the freezing process
Step 1 make your cookie crumble
If using cookies separate the cracker from the Oreo icing (set aside to throw in last ice cream layer) and break up crackers into desired crumbs.
Combine the Oreo crumbs and melted butter and stir until well combined. Spread the crumbs evenly onto the prepared cookie sheet.
Bake for 8-10 minutes in preheated 350 degree oven, then allow to cool. Use your fingers to break any big clumps into smaller ones. Set aside.
Step 2 prep your containers with placing plastic wrapped on the inside sides of the container(s), a little stray oil may help with keeping the wrap on the side.
Step 3 line the bottom of the container(s) with gram crackers
Step 4 time to make the whipped cream.
Using a can of chilled coconut cream add it to your mixer and start whipping it up.
When it starts to firm up feed in can of whipping cream (fill the can the coconut cream came in).
When the combination of those 2 starts to firm up add however much vanilla you'd like and then feed in the can of condensed milk.
Don't over work else the mixer will flatten and freeze harder.
Step 5 split the whipped mixture between your containers (thinner layers will freeze quicker) and pop into the freezer to build a solid layer before adding the next layers (at least 20 minute wait).
Step 6 time to make the fudge layer while the first layer freezes.
Add the chocolate chips, corn syrup and vanilla extract to a medium sized bowl.
Heat the milk/cream just until it begins to boil, then pour it over the chocolate chips. Allow to sit for 2-3 minutes, then whisk until smooth. If it's too runny add more chocolate chips or refrigerate.
Step 7 when the first layer is now solid and the fudge is room temp divide the fudge across you containers and put back into the freezer (~10 minutes)
Step 8 spread cookie crumbs over fudge and freeze for 2 hours
Step 9 repeat step 4 and freeze over night
Step 10 remove from the freezer put a layer of plastic wrap over the top of your container flip upside down and give the container a tap to free your cake to be cut up and served.
